Holly’s Chicken-Spinach Pasta

 Quick, complete meal in a pan.

INGREDIENTS:

1 ˝ lbs. boneless chicken (or turkey) breast cut into 1” cubes

2 – 3 tablespoons of olive oil

˝ cup chopped green onions (or yellow onion)

1 can condensed cream of chicken soup

1  -  28 oz. can of diced or crushed tomatoes

8 to 10 oz. of fresh spinach – washed & cut into strips.

1 lb. pasta   (I like to use rotini)

Asiago or Parmesan cheese, grated (optional)

DIRECTIONS:

1- Cook the pasta according to package directions

2- Heat the olive oil in a pan that will be large enough for all of the ingredients. 

3- Sauté the chicken and onion until the chicken is no longer pink, about 5 minutes.

4- Stir in the tomatoes, soup and heat thoroughly.

5- Stir in the spinach, heat until the spinach wilts.

6- Add salt and pepper to fit your tastes.

7- Top each serving with grated cheese.  Serve with your favorite bread or breadsticks.

 Holly's Hints:    You can also use leftover chicken or turkey
