LEMON ICE-PICK CAKE

350º, 50 Minutes

PUT IN BOWL and mix well:
1 package yellow cake mix
1/2 cup vegetable oil
1 cup orange juice
1 package instant lemon pudding
ADD:  3 eggs - one at a time, beating well after each addition
Bake in greased and floured bundt pan.

350º, 50 Minutes

Cool 3 minutes and invert on serving plate.  Poke holes in cake (top to bottom) with metal skewer.

 

GLAZE

1 1/2 cups confectioners sugar
2 TBL melted butter
1/3 cup lemon juice

Pour half of glaze over cake.  It will melt down the sides and go into the holes.

Add more confectioners sugar to remaining glaze and frost top of cake when it is cool.
