| 1 Cup Oil |
| 2 Sticks Oleo |
| 1 Egg (slightly beaten) |
| 1 Cup White Sugar |
| 1 Cup Brown Sugar |
| 1/2 Cup Coconut |
| 1 Cup Oatmeal (Regular or Quick style) |
| 1 Cup Crushed Corn Flakes |
| 3 1/2 Cups Flour |
| 1 tsp. Baking Soda |
| Walnuts, optional – approximately ½ cup chopped. (cashews are also good) |

1) If needed - soften the oleo in the microwave – unwrap it, put in microwave safe bowl and microwave for 1 minute on the defrost cycle (30% power) If not soft yet repeat for 20 seconds until oleo is soft NOT melted. 2) Thoroughly beat the oleo, and the 2 sugars together. 3) Slightly beat up the egg in a small bowl before adding it to the sugar mixture. Mix it in. 4) Mix in the oil. 5) Stir in the flour, then the baking soda, then the coconut, oatmeal, cornflakes, and nuts. 6) Make into 1 ½ “ size balls and place on an ungreased cookie sheet and then flatten each one with a fork - flat! 7) Bake at a 325° for 10 to 12 minutes Enjoy! |
