Quick & Easy |
| 3 or more small zucchini, green or yellow, 3" - 5" long |
| 1 can of Italian seasoned tomato paste |
| sliced mozzarella cheese |
| dry Italian Seasoning mix |
| - Microwave the whole zucchinis for 5 minutes on high |
| - Let them cool - then cut them in half, lengthwise |
| - Scoop out a small amount of the seed area so that you can fill it with some of the tomato paste |
| - Then top them with a 1/2" strip of cheese, and sprinkle Italian Seasoning on top |
| - Return to the microwave - heat until the cheese melts |
| Serve immediately - can be
eaten with forks or as a finger food. |
